Sweet Potato Fries

The first time I tried sweet potato fries is when a co-worker came from lunch with some and offered to share.
It was delicious, crunchy and just the right blend of sweet and salty. I have been hooked ever since.

Since then, I have scoured the web looking for the perfect recipe for these tasty snacks, and with some revisions, I finally think I got it! I usually pair these fries with a veggie burger with all the fixings. Check out my version of sweet potato fries below 👇

3 sweet potatoes
1 1/2 tbsp olive oil
1 tsp of crushed paprika
1/2 black pepper
1 clove garlic, crushed
1 tsp of salt (or to taste)
Preheat oven to 400 degrees. Wash and dry sweet potatoes and then cut half*. Cut potato halves into wedges about 1 inch wide. Rub wedges with crushed garlic. 

On a rimmed baking sheet, toss the garlic potatoes with olive oil, paprika, black pepper, and salt. Roast until soft, about 30 minutes.




*Tip: Soften sweet potatoes by poking them on all sides with a fork. Wrap the potatoes in a napkin and blast them in the microwave for 3-4 minutes.
